INGREDIENTS
Cajun Spice Mix
8 oz pasta (preferably Penne, Ziti, or Rigatoni)
8 oz. Jar of Sundried Tomatoes
2 Bell Peppers (each a different color)
1/2 medium yellow onion
4 oz. Chicken Breast
Step 1
Start by mixing your Cajun Spice mix (recipe here).
Step 2
Slice your Green Peppers and Onion the long way and set aside.
Step 3
Slice the chicken breasts into cubes and place into a bowl.
Step 4
Pour the oil in the sundried tomato jar over the chicken cubes. Mix together, then gradually pour in Cajun Spice mix and mix together. Cover, and place into fridge.
Step 5
Boil the pasta, drain, and set aside.
Step 6
Add the chicken and cook until a black fond covers the bottom.
Step 7
Place 2 Tbsp of butter into a pot over medium high heat, and add the onions after the butter has melted. Add 1 tsp salt. Mix until the onions start to become translucent.
Step 8
Add the sliced peppers and cook until tender, using them and the butter to deglaze the pot.
Step 8
Turn the stove off, but immediately add the cooked chicken, pasta, and sun dried tomatoes and stir, combining all ingredients.
