INGREDIENTS
162g Water
1g yeast (1/4 tsp)
250g AP flour
5g sea salt
5g Olive Oil
Step 1
Add water and yeast to the bowl of your stand mixer and give it 5 minutes to allow to bloom.
Step 2
Add flour and salt, and, with a dough hook, mix on the lowest speed for 5 minutes.
Step 3
Add Olive Oil and continue to mix on low for another 10 minutes (15 minutes total).
Step 4
Coat your hans with flour. Remove from mixing bowl, kneed into a ball, and place in an oiled bowl. Beware, the dough will be loose and sticky, so be sure to flour your hands well and work quickly.
Step 5
Cover the bowl either with a lid or saran wrap, trapping the moisture, and set on the countertop for an hour.
Step 6
After 30 minutes of the dough rising, crank your oven up to 500F and allow to come to temp, cycling the oven at least a couple of times (this step is key as most ovens need multiple cycles to fully come to temp).
Step 7
Remove from bowl and place on a well floured surface, adding flour to the top of the dough and flipping over a couple of times, each time adding more flour to the top so the dough doesn't adhere to the countertop or board it's placed on.
Step 8
Spread the dough out to an even 12 inch disc (this part will take practice).
Step 9
Place the dough onto a surface you're going to cook on (like a pizza screen) and apply the sauce and toppings.
Step 10
Place in oven for 12-15 minutes or until the cheese begins to turn golden brown.
Step 11
Slice and enjoy.
